Cheese Filling

This is a basic cheese filling for use in Lasagna, Ravioli, Stuffed Shells, etc. It will fill about 8 dozen Raviolis.

Time - Preparation: 15 min Time - Refrigerated: 1 hour
    Temp - Cooling: 36 °F
   
Equipment:
Mixing bowl  
   
Ingredients:
4 Cups Ricotta Cheese 1 pkg. (10 oz) Frozen Spinach
2 Eggs 1/4 tsp. Salt
  1/4 tsp. Ground Pepper
   
Preparation:
  • Thaw, drain, and finely chop the Spinach
  • In the bowl beat the eggs then add all ingredients and mix well
  • Once mixture is thoroughly blended refrigerate for at least an hour
   
Baking/Cooking:
  • Use as needed to fill various pasta dishes (follow cooking directions for those dishes)
