Sausage Soup

This is a nice hearty soup with sweet Italian sausage and vegetables.

Time - Preparation: 1/2 hours Time - Cooking: 2 hours
    Temp - Stove: Medium
   
Equipment:
4 Qt. Pot with lid  
   
Ingredients:
1 Lb. Sweet Italian Sausage 1/2 LB Baby Corn
1/2 LB Baby Carrots 1 Medium Onion
1 Zucchini (approx. 1/2 LB) 1 Cloves Garlic
1 Cup Mushrooms (Chopped) 1/2 LB Tomatoes
6 Cups Water  
   
Preparation:
  • Cut sausage into 1/4 inch slices
  • Peel carrots
  • Quarter zucchini and cut into 1/4 inch slices
  • Cut mushrooms into pieces the size of the carrots
  • Cut baby corn into two equal size pieces
  • Dice onion
  • Crush garlic
  • Cut tomato into eighths
   
Cooking:  
  • Brown sausage in soup pot
  • Add onions and mushroom and sauté until onions are transparent
  • Add garlic and sauté
  • Add remaining vegetables and water
  • Cover and simmer for 2 hours
