Sausage Soup
This is a nice hearty soup with sweet Italian sausage and vegetables.

| Ingredients: |
| 1 Lb. Sweet Italian Sausage |
1/2 LB Baby Corn |
| 1/2 LB Baby Carrots |
1 Medium Onion |
| 1 Zucchini (approx. 1/2 LB) |
1 Cloves Garlic |
| 1 Cup Mushrooms (Chopped) |
1/2 LB Tomatoes |
| 6 Cups Water |

| Preparation: |
- Cut sausage into 1/4 inch slices
- Peel carrots
- Quarter zucchini and cut into 1/4 inch slices
- Cut mushrooms into pieces the size of the carrots
- Cut baby corn into two equal size pieces
- Dice onion
- Crush garlic
- Cut tomato into eighths

- Brown sausage in soup pot
- Add onions and mushroom and sauté until onions are transparent
- Add garlic and sauté
- Add remaining vegetables and water
- Cover and simmer for 2 hours
