Kifli Apricot Filling

Kifli is a traditional Hungarian cookie. It can be filled with either a fruit or a nut filling. The recipes provided here are for the Dough, an Apricot Filling, and a Nut Filling.

This apricot filling is essentially a very thick apricot jam (and is very good that way). Do not use store bought jams as they are too thin and will run out of the cookie while baking.

Time - Preparation: 10 Min/Overnight Time - Cooking: 1 Hour
    Temp - Stove: Medium/Low
   
Equipment:
3 Qt. Pot Wooden Spoon
Food Processor (optional)  
   
Ingredients:
1 LB Dried Apricots 2 Cups Sugar
   
   
Preparation:
  • Cover apricots with hot water and soak overnight (use as little water as possible)
  • After soaking, cook uncovered until apricots are soft (stir frequently)
  • When the apricots are very soft they can be mashed against the side of the pot using a spoon (or puree in a food processor), puree should be smooth
  • Cook until puree is thick (spoon will stand up)
  • Add sugar and cook until completely dissolved
   
Baking/Cooking:
  • Once mixture is cool it can be used or stored
