Kifli Dough

Kifli is a traditional Hungarian cookie. It can be filled with either a fruit or a nut filling. The recipes provided here are for the Dough, an Apricot Filling, and a Nut Filling.

Time - Preparation:   Time - Bake: 12 min per cookie sheet
    Temp - Oven: 350° F (preheated)

Ingredients:
1 Lb Butter 1 cup Sour Cream
2 Tbs. Crisco 3 Tbs. Sugar
5 cups Flour 2 Tsp. Dried Yeast (1 pkg.)
4 Egg Yolks 1/2 cup Warm Water
1 Tsp. Salt Zest from 2 Lemons
   
1 Egg 1/4 tsp cream
   
Preparation:
  • Dissolve yeast in water
  • Mix butter, Crisco, and flour
  • Add remaining ingredients to flour mixture
  • Cover dough with plastic wrap and refrigerate 24 hours
   
Baking:
  • Remove dough from refrigerator, divide into quarters, roll into balls, and let rest at room temperature for a half hour
  • Roll dough ball out using floured board and rolling pin to 1/8 in thick
  • Cut rolled dough into 2 x 2 inch squares
  • Put generous 1/4 tsp. of filling into the center of each square
  • Fold one corner over filling (use water to help it stick)
  • Roll cookie so opposite corner wraps around cookie and tucks in underneath
  • Using a greased cookie sheet place cookies 1/2 inch apart
  • Brush cookies with a glaze made of a beaten egg and a 1/4 tsp of cream
  • Bake for 12 min or until golden brown
